Disney Springs has SO many things to do. You can choose from a wide variety of restaurants and shops, and see some great live entertainment.

Today, we are headed over to Disney Springs to try out a restaurant that you may not have known even existed. We are trying out a food truck (yep, a food truck!) that is tucked into Disney Springs and offers a menu of Mexican food.

Atmosphere

The 4 Rivers Cantina Barbacoa Food Truck is located on the West Side of Disney Springs. It is in an area with a selection of food trucks across from Disney’s Candy Cauldron. When we were there you could find a total of three food trucks: 4 Rivers Cantina Barbacoa, Cilantro Urban Eatery, and GoJuice.

4 Rivers Food Truck

The area is currently pretty bare and there are only a few tables scattered around. The worker at the food truck said that a lot of the tables and chairs had been removed due to the nightly drone show. There are a few tables surrounding the tree, as well as some tables behind the 4 Rivers Food Truck. However, all of the seating is outdoors and there was very little shade in the area.

Not much seating available

To order, you just head up to the food truck and place your order. Your name gets called when your order is ready and you just head back up to grab your food. Let’s take a look at what is on the menu at the 4 Rivers Food Truck.

Menu

The menu is fairly limited, but you can still find a decent selection of Mexican dishes. You can choose from a taco cone, birria tacos, birria quesadilla, street tacos, or a burrito bowl. Each of the meals comes with your choice of filling from the following list: brisket barbacoa, chicken tinga, adobo pork, tri-tip steak, or roasted sweet potato.

You can also get a side of black beans and rice or a dip trio. They have one option for kids which is a cheese quesadilla. For drinks, you can grab a bottle of water or choose from a variety of canned drinks. Let’s take a look a what we ended up ordering!

Eats

We chose a couple of items to hopefully get a good sample of what the 4 Rivers Food Truck offers! We got street tacos, a taco cone, and a dip trio.

Full Spread

We started off with the Taco Cone with Adobo Pork which costs $12.50. The taco cone includes your choice of filling, shredded lettuce, guacamole, sour cream, Pico de Gallo, queso, cilantro, jalapeño, and a lime wedge.

Taco Cone

The Taco Cone has SO much meat in it! We got the Adobo Pork and it was tender and flavorful. The pork is shredded and the seasoning reminded us of the taco seasoning in the packets. The jalapeños add a kick to the dish, but it would be easy enough to take them out if you don’t like spicy. The Pico de Gallo added a good freshness and the sour cream added a creamy element that helped to soften the kick of the jalapeños a bit.

The guacamole tasted good too, but it is just your average guacamole in our opinion. We only found a bit of the lettuce in this dish and we definitely wish there was more. The cone is a unique way to serve this dish, although it was a bit difficult to eat (plus, if you want to set the cone down at all it was a bit of a struggle!) There was definitely no lacking in the meat department in this taco, but we do wish there were some other toppings in this dish like rice or beans.

Next up, we tried the Street Tacos with Chicken Tinga. The street tacos include your choice of filling with guasacaca, crème fraiche, pico de gallo, queso fresco and cilantro in a grilled tortilla, with lime and jalapeño. You can grab the street tacos for $12.25.

Street Tacos

We thought the star of this dish was the tortillas! They were a great thickness and were grilled for a really yummy texture. We chose the Chicken Tinga as our filling and we thought it was delicious. The meat was really juicy and full of flavor.

We thought the toppings on the tacos really pulled everything together. The Pico de Gallo added freshness and the queso fresco was a perfect creamy addition. These were some really delicious tacos and we thought the serving size was fantastic for the price!

Let’s dig in!

Finally, we also tried the Cantina Trio for $8.50. The trio contains Pico de Gallo, guacamole, and queso with fresh tortilla chips.

Cantina Trio

This was probably our least favorite dish that we tried. The tortilla chips weren’t anything special and the dips fell short in our opinion. Our favorite was the queso. It was creamy and had a very strong cheese taste. We would compare it to a white plastic cheese queso, but we really enjoyed it. There wasn’t much depth of flavor to it, it mostly just tasted like cheese. The guacamole was your classic guacamole, but wasn’t anything that really wowed us. There was plenty of avocado flavor with a hint of tomato and onion.

Guacamole, Queso, and Pico de Gallo

Our least favorite was the Pico de Gallo. The one we got tasted like it had likely been sitting for a while and did not taste fresh at all. The Pico did have a slight kick to it and the tomatoes had a lot of sweetness to them. There was good potential, but unfortunately, it fell flat with the lack of freshness.

Nosh or Not?

You might want to stop by the 4 Rivers Food Truck if…

  • You are in Disney Springs looking for an easy place to get tacos. While they may not be the best tacos you will ever eat, they are still really tasty! If you are in Disney Springs and craving a quick taco, the 4 Rivers Food Truck could be a great option.
  • You want an easy snack or meal option with a view of the water. The 4 Rivers Food Truck can be a great spot if you want to grab a quick bite without having to deal with making reservations. You can simply walk up and order, and have your food shortly after. Plus, you can enjoy your food with a view of the water.
  • You think eating out of a taco cone sounds like a great meal. The Taco Cone is definitely a unique meal and if you are hoping to try one, 4 Rivers Food Truck has you covered!

You may want to stop somewhere else in Disney Springs if…

  • You want to grab really fresh Mexican food. While the 4 Rivers Food Truck could be great for some quick tacos, it won’t be the freshest Mexican food you can find in Disney Springs. We recommend Frontera Cocina for Mexican food, or Jaleo for Spanish food.
  • You want to eat somewhere with lots of seating and air-conditioning. One of the biggest downside of the food truck is that there is VERY limited seating and it is all outside. If the weather is great, this could be a good option, but during a warm day it isn’t the most pleasant eating experience. If you are looking for a quick service restaurant with indoor seating, try checking out eet by Maneet Chauhan, Blaze Pizza, The Polite Pig, D-Luxe Burger, or Earl of Sandwich.
  • You want a restaurant with a lot of food options. 4 Rivers Food Truck does not have a huge menu full of options. If you are eating with a bigger group or have picky eaters, this may not be the best option. Restaurants like House of Blues or Summer House on the Lake have menus with more options.

Overall

While we enjoyed the food we got at the 4 Rivers Cantina Barbacoa Food Truck for the most part, we feel like there wasn’t anything that really knocked our socks off. The street tacos were tasty and we liked the uniqueness of the Taco Cone, but the Cantina Trio was a disappointment. The lack of seating and all the seating being outdoors are big negatives, and there is so much amazing food in Disney Springs. We think this could be a great spot for a quick bite to eat, but we highly recommend checking out other restaurants at Disney Springs if you are looking for a better overall experience.
