Get ready for Cinco de Mayo with these insanely delicious pork fajitas! Classic fajitas are made with your choice of seasoned meat, nestled in a bed of fresh cooked peppers and onions. Pork is the best compliment to the fresh vegetables and the fajita seasonings. I like to use lean pork to switch it up from the traditional chicken, steak, or shrimp.

After you try this recipe, you’ll be reminded of how delicious and versatile pork can be in many different recipes. I love to use pork in place of chicken whenever possible to switch things up. In fact, it’s starting to become my new protein of choice in just about every recipe!
Ingredients You Need to Make Pork Fajitas
These pork fajitas are easy because the ingredients are simple, and the recipe quickly comes together. I love it when recipes don’t require a lot of ingredients. It makes my grocery shopping stress free! See the recipe card at the bottom of the post for the exact amounts.
- Pork Tenderloin: Slice it up thin on your cutting board. Then it will help the meat cook evenly and quick.
- Olive Oil: Oil is a must in helping the meat not stick as it cooks. It also helps the fajita seasoing coat the pork.
- Fajita Seasoning: Try my homemade fajita seasoning or use store-bought. The Mexican spices really make this dish!
- Bell Peppers: You can use any color combination. I like to use a lot of different colors of veggies because then it makes the presentation beautiful!
- Purple Onion: I love the purple onion (also known as a red onion) added to give the fajitas another beautiful color mixed in. Any onion works. Just chop it up and add it in!
- Flour Tortillas: I like flour tortillas the best, but corn torillas work as well. I like to warm my tortillas up first because it’s better that way!
- Optional Toppings: Shredded cheese, guacamole, sour cream, cilantro, pico de gallo, lime juice, salt, etc. Once you have your favorite mix-ins then you can build your own fajitas. Then you can add or leave out whatever you like!
How to Make Pork Fajitas
The steps to making these pork fajitas are straightforward and easy. These fajitas come together so fast, and your family will be eating in no time!
- Coat: In a medium-sized bowl, add the sliced pork, olive oil, and fajita seasoning. Then stir them all together to coat the meat well.
- Cook Meat: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the sliced pork and cook for 8-10 minutes or until cooked through. Remove from skillet and set aside.
- Add Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil, sliced onions, and sliced peppers. Then, cook for about 5 minutes until the onion is caramelized and the peppers are soft.
- Combine: Add the pork back to the skillet and then stir in with the onions and peppers. Cook for an additional 3 minutes, or until they are all warmed through together.
- Assemble: Serve with warm tortillas and then add on all of the toppings of your choice!

How to Store Leftovers
- In the Refrigerator: Once your pork fajitas are cooked then you can store them in an airtight container for up to 4 days.
- In the Freezer: Cool the pork fajitas ingredients and then place them in an air tight container or ziploc bag. Label it with the date and freeze them for up to 6 months.
- To Reheat: You can heat your leftovers in the microwave or on the stove! If you are reheating your fajita mixture from frozen then thaw them in the fridge overnight. Keep in mind that rewarming pork can be tricky because it can dry out. Add oil to your pan while reheating them on the stove and then it will help add some moisture back in.

- 4 tablespoons Homemade Fajita Seasoning (or store-bought)
- 2 cups Bell Peppers, sliced (any color combination)
- 1/2 Cup Purple Onion, sliced
- Flour Tortillas (for serving)
