How the NEW Waffle in Disney World Is DIFFERENT From the Rest

The new quick service spot is also home to the park’s new Starbucks location, and we got to check it out when it soft-opened last week. We gave you a full tour of the Cafe as well as a full review of and look at the Eatery. One of the things we tried at both places was the new Liege Waffle, and now, we just found out some really interesting info on the treat!

The Pastry Culinary Director at Walt Disney World, Stefan Riemer, recently posted on Instagram about the new Liege Waffle at Connections Cafe and Eatery in EPCOT. We’ve tried the waffle, but now we know even more details about how it’s made!

Liege Waffle

Chef Riemer calls the Liege Waffle “a game changer” because they batch out fresh Brioche dough, press it in Pearl sugar, and then bake it in a cast iron to create that caramelized but flaky waffle. It’s then topped with fresh strawberries, vanilla whipped cream, and chocolate sauce at Connections Eatery, or you can have it all on its own at Connections Cafe.

The chef then goes on to talk about how the Liege Waffle is different from a Belgian Waffle, and how they’re both different from a Mickey Waffle! He says the Liege Waffle is the most technical of the three, because the dough has to be fermented and tempered to get to the perfect texture.

The different between all waffles are ingredients and the leavening, according to Chef Riemer, and the “hidden star” is a quality yeast that’s a key ingredient in Belgium, since “they brew one of the best beers in the world.” Both Liege and Belgian waffles originate from Belgium.

What a beauty

Who knew waffles could be so complex?! And, we’re glad for it, because it means we get to eat ALL of the different kinds of waffles around Disney World. We could definitely taste the caramelization of the sugar on the waffles we tried, and they are truly a delicious dessert, snack, or breakfast option. You can check out Chef Riemer’s full post below!
