Grasshopper Pie

This chilled, minty pie grasshopper pie has a creamy filling with an Oreo cookie crust. The taste and smooth texture are perfect and will have just about anyone coming back for seconds!

What is Grasshopper Pie?

If you have never had grasshopper pie before then, you are in for a real treat! You start with some Oreo cookies to mix the delicious crust, and the filling is made from a delightful concoction of powdered sugar, cream cheese, heavy cream, and some Crème De Cacao! This no-bake pie is best made a few hours (or a day) ahead of time so that it can have time to set up in the freezer.

Grasshopper pie is a great dessert to make around St.Patrick’s Day because when you add the food coloring to the creamy base, it makes the perfect green color! In fact, go all out for St. Patrick’s Day this year and make these thin mint muddy buddies or these thin mint truffles to celebrate the holiday with! Your kids will LOVE it!

Ingredients in Grasshopper Pie

I love making no-bake pies! They are just a fun twist on such a classic dessert, and this grasshopper pie is no exception! See the recipe card at the bottom of the post for all the exact measurements.

Crust

  • Sandwich Cookies: You can use regular or mint oreos.
  • Butter: I used unsalted butter to make this crust
  • Salt: A pinch of salt will enhacne all of the flavors of the crust.

Filling

  • Cream Cheese: Soften your cream cheese first by setting it out on the counter before you plan on using it.
  • Powdered Sugar: This blends in and mixes seamlessly so that you don’t have a grainy texture. It will make your grasshopper pie smooth and silky!
  • Crème De Menthe Liqueur: You can substitute this with 1 teaspoon peppermint extract.
  • Crème De Cacao: ½ teaspoon vanillla extract makes a great substitue if you don’t want to use alcohol.
  • Heavy Cream: You will divide this up and use it in the filling and on top of the pie!
  • Optional Ingredients: Green food coloring, crushed oreos and crushed andes mints.

How to Make Grasshopper Pie

This pie may take a while because it has to chill, but the actual preparations are super quick and easy! Plus, it’s always good to have a dessert on hand to make ahead of time so that you aren’t spending all day in the kitchen right beforehand!

  • Preheat: Preheat the oven to 350°.
  • Blend Oreos: Place the sandwich cookies in the food processor and process until you have a fine crumb.
  • Combine and Press into Pie Tin: Add the melted butter and salt to the food processor and mix until combined. Press the cookie mixture into a 9-inch pie dish or tart pan (just make sure the tart pan has 2-inch sides if using one.)
  • Bake: Bake for 10 Minutes. Allow to cool completely before adding the filling.

Filling

  • Combine: In a large bowl combine the cream cheese, powdered sugar, creme de menthe, and creme de cacao until smooth. If desired, add a drop or two of green food coloring.
  • Fold: In a large bowl, whip 1 ½ cup of the whipped cream until you reach stiff peaks. Fold the whipped cream into the cream cheese mixture just until no streaks of white remain. Pour into the prepared crust and smooth the top.
  • Whip: Whip the remaining cup of heavy cream with the powdered sugar until you read medium-stiff peaks. This can be spread directly over the top of the filling, or it can be piped around the edge for a decorative border.
  • Garnish: Garnish with chopped Andes Mints or crushed cookies.
  • Chill: Chill your grasshopper pie in the freezer for at least 4 hours, until it is firm. Remove from the freezer for 5-10 minutes before serving.

Can I substitute the Alcohol in Grasshopper Pie?

Yes! To make this pie alcohol-free, you can substitute the Crème De Menthe Liqueur with 1 teaspoon peppermint extract. Substitute the Crème De Cacaowith ½ teaspoon vanilla extract instead!

How to Store Leftovers

You can freeze leftover grasshopper pie by covering it loosely with some foil. It can stay frozen for about 5-7 days. When you are ready to eat it, go ahead and take it out of the freezer for about 5-10 minutes before you are ready to serve!

  • For a non-alcoholic version, the creme de menthe can be substituted for a mint flavored drink syrup and the creme de cacao can be omitted completely.
  • If creme de menthe is not available (it was discontinued in the entire state of Utah, so I was lucky to find some) peppermint schnapps can be substituted but green food coloring will have to be used to achieve the green coloring.
  • It’s best to make sure the crust is fully cooled before filling the pie shell, otherwise the filling may not set completely.
