REVIEW! We’re Trying Gideon’s Bakehouse January Options (Including a Coffee Toffee Cookie!) in Disney World

We’re talking about Gideon’s Bakehouse. A legitimate cookie haven that serves 1/2 pound cookies the size of your face. We’re in love, we’re in love, and we don’t care who knows it! Ok, we won’t get too ahead of ourselves. They’re good cookies, but we still have a lot to say about them! Today is the first day of the month and that means a NEW cookie was released at Gideon’s. The bakehouse will release limited-time cookies every month for guests to try out. We headed back to CookieLand, USA to review the newest cookie and taste a few more surprise items!

Before we get to cookies, we should let you know that Gideon’s is super popular since it opened. We arrived at the bakehouse around 9:15AM and there was already a bit of a line forming for the 10AM opening time.

Granted, there was a new cookie released today and it’s New Year’s Day. The Cast Member said they have been experiencing three hour waits for the most part, however. Get there early in the morning prior to opening if you don’t want to wait too long!

Coffee Toffee Cookie

A new year and a new cookie? Spoil us, why don’t you! This month’s cookie is packed full of java! Just the thing we need to wake us up from the nightmare that was 2020. The vanilla bean cookie is made with ground espresso beans from Lineage Coffee, a local Floridian coffee roaster. You know those beans are fresh! It also had bits of crunchy chunks of toffee and a massive amount of chocolate chips.

Side Note: It’s not totally new since the other Gideon’s location featured this cookie before. It’s new to Disney Springs though!

You can actually taste the coffee in this cookie! It’s not like you’re tasting the “essence” of coffee. It’s like you dunked your chocolate chip cookie in a mug of coffee. The fresh ground espresso beans are super aromatic and add the slightest crunchy texture. (It doesn’t feel like you’re eating grounds though!) This cookie is made for those of you who like the taste of coffee and big chunky cookies.

The toffee adds crunch and subtle sweetness to the cookie too. Although, we couldn’t really taste the toffee. The chocolate really overpowers the toffee flavor. We didn’t mind too much since chocolate and coffee goes together like peanut butter and jelly. Each cookie is $6.

Speaking of peanut butter! Holy moly. Talk about decadent! The double-frosted cake slice we had was very tasty, came in a huge portion, but RICH. This was Gideon’s Cake Slice of the Day and featured chocolate cake layered with both buttercream and peanut butter banana icings.

We took one bite and felt like we exceeded our sugar intake for the day. Then we took another bite and got over it. It’s rich, but it’s also super tasty. The banana in the peanut butter icing doesn’t taste artificial at all. Banana flavoring can taste super fake sometimes, but this tasted like a legitimate banana instead of an extract. It’s so creamy and has a great balance between peanut butter and vanilla.

The chocolate cake was very moist and not too sweet. This helped balance out the sugar in both icings. That said, it’s still very sweet and filling. You could easily share this with two other people. This is absolutely a treat for people who love icing and have a huge sweet tooth. Others may want to opt for a single-frosted cake instead!

The Cake Slice of the Day rotates each day so we may or may not see this one repeat itself in the future. Keep up with Gideon’s Instagram posts to learn about what’s baking! You can also choose the permanent slice, the True Red Velvet Cake, that we tried on opening day! All cake slices are $8.

Coffee Cake Cookie and Vanilla Buttercream Icing

We already tried the Coffee Cake Cookie, but it was a hit with us in the past. We wanted to try the cookie with the buttercream icing you can purchase by itself. We reviewed the peanut butter icing before and had to try the vanilla icing because it’s such a good deal. You can get this tub of icing for $1.50!

The Coffee Cake Cookie tastes like a perfectly baked piece of coffee cake. The vanilla bean cookie is filled with cinnamon strudel then topped with double baked butter crumbs. The cookie is served only at the Disney Springs location in the morning. Once the cookie sells out, they’re gone for the day!

The Coffee Cake Cookie matched well with the buttercream icing. It’s basically begging to be dipped in something. Coffee, tea, icing, you name it. We also experienced this cooking with the pumpkin icing that was served at Gideon’s original East End Market location outside of Disney World. We’re sincerely hoping that icing makes its way to Springs this fall!

Ginger Snap Cold Brew

After all that dessert, we needed to snap ourselves out of the food coma. The Ginger Snap Cold Brew did just the trick! The cold brew coffee is made by Lineage Coffee and tastes smooth with hardly any bitter taste. It’s then mixed with oat milk and ginger syrup for flavor. The Gideon’s employees treat it like a “coffee cocktail” and shake the ingredients together.

This definitely had a spicy kick! We didn’t expect to taste the ginger so strongly. It had enough spice to give you that tingly feeling in the back of your throat. It’s not your everyday cold brew. It’s full of flavor, creamy oat milk, and a splash of sweetness.

Although, if you’re in the mood for strong coffee, you might want to skip it. This is a sweet coffee drink that might be best for people who take their coffee with cream and sugar! The cold brew coffees are $5.
