We’re visiting Disney’s Coronado Springs Resort and Disney’s Caribbean Beach Resort for menu updates, new merchandise, and construction progress! Here’s What’s New!
Disney’s Coronado Springs Resort — Gran Destino Construction
Progress continues on Gran Destino Tower at Coronado Springs, where exterior work seems to be approaching completion.
Gran Destino Tower opens for guests beginning July 9, 2019! We can’t wait to check out the Tower’s rooftop dining location Toledo — Tapas, Steak, and Seafood and those views from the top!
Disney’s Coronado Springs Resort — Menu Updates
Cafe Rix has two new-to-us sweet treats. There’s an Easter Cupcake complete with bird’s nest and candy eggs.
Strawberry Cake and Orange Cake are sweet and simple — lovely in pastel for this spring season.
Maya Grill has released its Easter menu. There’s no word yet on the price for this meal, which includes an appetizer, entree, and dessert.
In El Mercado, the House Soups are now Chicken Tortilla (a standby lately) and Broccoli Cheddar.
Disney’s Coronado Springs Resort — Merchandise
We found this great Walt Disney World shirt at Coronado. We love the ruffles on the shoulders.
And these new-to-us Ariel Pajamas are a lovely shade of turquoise.
If you’re celebrating Easter at Coronado Springs, know that the resort has pre-made Easter Baskets for sale as well as components so you can purchase other items to make your own.
Disney’s Caribbean Beach — Skyliner Station Construction
Meanwhile at Disney’s Caribbean Beach Resort, Skyliner Station construction continues in earnest. You can see the track entering the building on the right and lots of detail to help it blend with the resort’s style.

Banana Cabana, the pool bar at Caribbean Beach, now has a new plant-based entree.
The Plant-Based Jerk Sandwich is served on toasted ciabatta and is topped with grilled pineapple and roasted chili-mayo.

Also at Banana Cabana: this fun tee shirt! It’s definitely got an island vibe.
Disney’s Caribbean Beach Resort — Mermaid School
Finally, it’s time to live a dream! Mermaid School is open at Caribbean Beach Resort. This one-hour session happens twice a week and requires a reservation through the Concierge Desk. (Small price to pay to earn your fins!)
